Homemade Bitterballen with Tomato and Chilli Mayonnaise

These little snacks are definitely a treat, crispy breaded crumb, soft gooey melted cheese on the inside; even better when dipped to the tomato chilli mayonnaise! I don’t make this often due to the lengthy process also the fact that we cannot stop myself from devouring them 😀

Ingredients:

  • 100 grams butter
  • 150 grams all-purpose flour
  • 350 ml milk
  • 250 grams minced chicken
  • 1 onion, chopped finely
  • 1/4 teaspoon ground nutmeg
  • 2 whole eggs, briskly whisk
  • 100 grams bread crumb
  • salt, sugar, and pepper for seasoning
  • 2 tablespoons of water
  • oil for deep-frying
  • cheddar cut in little cubes (can be omitted)

Heat up butter on a pan, then add in chopped onion, stir until cooked and fragrant. Add in the flour and stir well, then add in milk while keep stirring to make sure no lumps.

Add in minced chicken and all the seasoning, toss everything until all chicken are fully cooked. Set aside to cool.

When it is cooled, shapes it into little balls like meatball size, at this stage you can add in cheddar cubes as the filling if you like. They are already nice even without any extra fillings.

For the crumb: mix the whisked egg and water, dip each bitterballen into this mixture before rolling in the bread crumb. Repeat this for all bitterballen and freeze them for at least 1 hours to help the crumb to stay in place. For deep-frying, make sure the oil is hot before you put in the bitterballen.

For the sauce: combined mayonnaise with tomato sauce and chilli sauce, adjust the chilli sauce to suit your liking.
